Beef Filet with Chipotles

8 (6 oz) beef tenderloin filets
8 corn tortillas, lightly heated
8 (2 oz) slices Chihuahua or Monterey jack cheese
1 jar (16 oz) Texas Tamale Company Chipotle Pepper Sauce
Chopped cilantro or parsley for garnish

Grill beef to your preference. Place lightly toasted tortilla on each plate. Top with filet, then cheese slice. Place under broiler to melt and top off with Texas Tamale Company Chipotle Pepper Sauce. Enjoy!


Texas Tamale Jalapeno Pepper Jelly

Texas Tamale Company Jalapeno Pepper Jelly

Mexican Cranberries

1 can (16 oz) cranberry sauce (whole berry)
1 jar (8 oz) Texas Tamale Company Jalapeno Pepper Jelly
2 Tablespoons of chopped fresh cilantro

Combine all ingredients in a small sauce pan. Cook over low heat stirring often, until Texas Tamale Company Jalapeno Pepper Jelly melts. Cool.

Texas Tamale Company Chipotle Sauce

Texas Tamale Company Chipotle Pepper Sauce

Deep-Dish Tamale Pizza

2 cups flour
2 cups corn meal
Texas Tamale Company Chipotle Pepper Sauce
½ pound chicken
Black beans
Green chiles
Bell peppers
Monterey Jack cheese

Preheat oven to 350°F. Use your favorite pizza dough recipe, but trade half the flour for corn meal (approximately 2 cups of each). Put the dough in a 9x9 pan. Cover the bottom of the dough with Texas Tamale Company Chipotle Pepper Sauce. Cover the sauce with a heavy layer of Monterey Jack cheese. Cover the cheese with topping of your choice. I suggest ½ pound chicken, black beans, green chiles, and bell peppers. Then, add a final generous layer of cheese. Bake for approximately 25 minutes. Enjoy!

Grilled Corn with Cilantro Butter

1 package grilled corn or frozen corn niblets
3 Tablespoons butter
2 Tablespoons Texas Tamale Company Cilantro Pepper Sauce (additional may be added)
Salt to taste

Melt butter over low heat. Do not allow to separate. Add Texas Tamale Company Cilantro Pepper Sauce. Combine all ingredients in a small sauce pan. Cook over low heat stirring often, until jelly melts. Cool. Adjust seasoning. Drizzle over grilled corn or toss with corn niblets.

Heaven & Hell Coleslaw

1 small cabbage
½ cup Sun Maid Tropical medley diced fruit

For the Dressing:
4 Tablespoons Texas Tamale Company Jalapeno Pepper Jelly
2 Tablespoons Texas Tamale Company Cilantro Pepper Sauce
1 Tablespoon rice vinegar
¼ cup light Miracle Whip
¼ teaspoon salt

Core cabbage. Slice into fourths. Slice each fourth into very fine slices. Place in bowl. Add fruit medley and mix with sliced cabbage. Melt Texas Tamale Company Jalapeno Pepper Jelly. Remove from heat. Add remaining ingredients and mix well. Add dressing to coleslaw. Toss until well mixed. Refrigerate for flavor infusion.

Texas Tamale Company Jalapeno Pepper Jelly

Jalapeno Pepper Jelly Glazed Cornish Hens

2 (1½ pound) Cornish hens, split
½ teaspoon salt
¼ teaspoon pepper
1 jar (8oz) Texas Tamale Company Jalapeno Pepper Jelly
2 teaspoons grated lime rind
½ cup lime juice
¼ cup vegetable oil
1 Tablespoon chopped fresh cilantro

Sprinkle hens with salt & pepper, place cut side down in large shallow dish; set aside. Melt Texas Tamale Company Jalapeno Pepper Jelly in small saucepan over low heat. Add lime rind and remaining ingredients. Pour over hens; cover & refrigerate 3 hours, turning occasionally. Prepare grill, let coals burn until white. Rake coals to opposite sides of grill, place a drip pan between coals. Drain hens, reserving marinade. Arrange on food rack over drip pan. Cook, covered with grill lid over medium hot coals for 35 minutes. Brush with jalapeno glaze; cook additional 40 minutes.

Pea Salad

1 package frozen peas
3 eggs hard boiled, small dice
1 cup shredded cheese (Monterrey Jack, cheddar, or spicy)
¼ cup bacon, crumbled (optional)
Salt and pepper to taste

For the Dressing:
1 cup light miracle whip
3 Tablespoons Texas Tamale Company Cilantro Sauce De Julia
1 Tablespoon Texas Tamale Company Jalapeno Pepper Jelly

Defrost peas and drain well. Mix dressing ingredients. Add dressing to peas, diced eggs, and cheese. Adjust seasoning. Top with crumbled bacon. Chill for at least one hour.

Pepper Sauce Potatoes

Have you ever wondered what you can do with left over mashed potatoes? Ready to try something that would make a whole new dish? Here is a simple trick using our Texas Tamale Company Jalapeno Pepper Sauce.

3 cups mashed potatoes
¼ cup salad dressing to moisten
2 to 3 Tablespoons Texas Tamale Company Jalapeno Pepper Sauce
Salt and pepper

Mix salad dressing and Texas Tamale Company Jalapeno Sauce. Add to mashed potatoes and mix well. Add salt and pepper to taste. Heat until just warmed.


Texas Tamale Company Cilantro Sauce De Julia

Roasted Potatoes

2 large Yukon Gold potatoes

For the Dressing:
½ cup Texas Tamale Company Cilantro Sauce De Julia
¼ cup sweet candied jalapenos
5 Tablespoons butter, room temperature
1 cup Sargento Mexican 4 cheese, shredded

Preheat oven to 400°F. Peal potatoes and cut into large pieces. Place in a pan and cover with water. Cook until just fork tender. Drain. Chill for 15 minutes in refrigerator.

To microwave potatoes:
Place diced potatoes on a plate; sprinkle with water and cover with plastic wrap. Cook 3 minutes on high.

Place butter, salsa (if desired) and candied jalapenos in food processor and mix until very finely chopped. Place combined ingredients in a pan over a very low heat until butter is melted. Toss with cooled potatoes. Place on sheet pan and put in oven for 20 minutes. Top with cheese and continue to cook just until cheese has melted. Remove from oven and serve.


Texas Tamale Company Jalapeno Pepper Sauce

South of the Border Cheesy Mac

1 pound package elbow macaroni
2 teaspoons salt
1 Tablespoon honey
3 cups shredded quesadilla cheese (loose 8 oz)
3 cups shredded sharp cheddar (loose 8 oz)
1 cup (8 oz) hickory smoked bacon, cut into small pieces
1 cup Texas Tamale Company Jalapeno Pepper Sauce
1 cup diced tomatoes
2 cups Half & Half ( optional: 1 cup heavy cream & 1 cup milk)
¼ teaspoon salt

Preheat oven to 350°F. Using plenty of water, cook pasta until all done. Cool rapidly by running pasta under cold water. Set aside. Utilizing scissors, cut bacon. Cook until just beginning to crisp. Drain well. Mix Texas Tamale Company Jalapeno Pepper Sauce, diced tomatoes and salt. Set aside. Mix milk and Half & Half. Set aside. Using a shallow oven-proof casserole dish, place ½ of the macaroni in the dish. Top with ½ sauce and tomato mixture. Then top with ½ of the bacon and ½ of the cheeses. Repeat layers. Pour milk mixture over the dish. Place in oven and cook for approximately 30 minutes or until cheese melts. Remove from oven and cool.

Note: This is one of our favorite pepper jelly recipes using the Texas Tamale Company pepper jelly.


Texas Tamale Company Cilantro Sauce De Julia

South of the Border Eggplant Stew

1 medium eggplant
⅓ medium onion, medium dice
1 small green bell pepper, medium dice
1 tablespoon of vegetable oil
½ cup celery, medium dice
1 can diced tomatoes
½ cup Texas Tamale Company Cilantro Sauce De Julia
2 Tablespoons concentrated orange juice

Peel eggplant and cut into three slices. Sprinkle with salt and let sit for 20 to 30 minutes. Saute onion, bell pepper and celery in hot pan with vegetable oil until onions are clear and pepper is soft. Add tomatoes, Texas Tamales Company Cilantro Sauce De Julia and concentrated orange juice. Rinse and gently squeeze eggplant. Cut into large dice and add to tomato mixture. Cook over medium heat for 30 minutes. Adjust seasoning, adding salt and pepper to taste. May be served alone or over rice.

Can add cooked, diced chicken breast.

Squash with Jalapeno Pepper Sauce

3 medium yellow squash, medium dice
1 cup Texas Tamale Company Jalapeno Pepper Sauce
½ cup shredded Mexican four cheese
Salt to taste

Place squash and Texas Tamale Company Jalapeno Pepper Sauce in a small saucepan. Cover and simmer until squash is tender. Add cheese. Stir until cheese is melted. Adjust seasoning. Serve immediately. Enjoy!

Sweet and Spicy Spinach Polenta

1 package (17.5 oz) quick cook polenta
½ cup chopped spinach, squeezed dry
1 Tablespoon Texas Tamale Company Jalapeno Pepper Jelly
1½ Tablespoons Texas Tamale Company Cilantro Sauce De Julia
¼ cup walnut pieces
½ teaspoon salt
1 cup shredded Mexican four cheese

Preheat oven to 350°F. Follow package directions to cook polenta. If necessary, add a small amount of water for a firm but a smooth creamy texture. When polenta is creamy, add spinach, Texas Tamale Company Jalapeno Pepper Jelly, Texas Tamale Compant Cilantro Sauce De Julia and walnut pieces. Mix well. Adjust seasoning, adding salt if necessary. Pour into a flat, shallow ovenproof pan. Top with cheese. Place in oven for 10 minutes or until cheese melts. Remove from oven. Cool. Slice into wedges and serve with Texas Tamale Company Homestyle Chili or with Tres Frijoles Bean Salad and roasted chicken. Polenta, when sliced, may be grilled or lightly fried. Polenta may also be eaten while it is warm and creamy. Simply stir in cheese and serve to eliminate the final steps of placing in an oven.

Tres Frijoles Salad

Looking for something that is quick and easy with spice and just a touch of crisp sweetness?

1 can black beans, drained
1 can dark red kidney beans, drained
1 can pinto beans, drained
1 can Mexican corn, drained
¾ cup sweet onion, diced
¾ cup Sargento diced & shredded pepper jack & cheddar cheese

For the Dressing:
⅓ cup candied banana peppers, very small dice
¼ cup Texas Tamale Company Cilantro Sauce De Julia
Juice of 1 lime
½ teaspoon salt
¼ teaspoon black pepper

Drain canned beans and corn very, very well. Place in large bowl. Add diced onion and diced and shredded cheese. Mix well. Place dressing ingredients in a bowl and mix very well. Pour over salad. Mix well. Adjust seasoning if necessary. Cover and chill for several hours or overnight.

Excellent as a side dish or topping with grilled chicken, tuna or swordfish steak, salmon steak or BBQ, or as an entrée with other salads.
